  • 2 cups cooked white or brown rice
  • 1 cup fresh or canned pineapple chunks
  • 1 red bell pepper, diced
  • 2 cups broccoli florets, steamed or sautéed
  • 1/2 cup teriyaki sauce (low sodium preferred)
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds for garnish
  • 1 tablespoon olive oil

Instructions

  1. Step 1: Prepare the Rice Base: Cook your rice according to the package instructions. For better flavor, you can cook it in coconut milk or chicken broth. Once finished, fluff it with a fork and set it aside to cool slightly.
  2. Step 2: Brown the Ground Beef: Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook until it is no longer pink, breaking it apart with a spatula as it browns. Drain any excess fat from the pan.
  3. Step 3: Aromatics and Vegetables: Add the minced garlic, grated ginger, and diced red bell pepper to the skillet with the beef. Sauté for about 3 to 4 minutes until the peppers begin to soften and the garlic becomes fragrant.
  4. Step 4: Glaze with Teriyaki Sauce: Pour the teriyaki sauce over the beef mixture and stir to coat everything evenly. Add the pineapple chunks and broccoli florets. Simmer for an additional 2 to 3 minutes until the sauce thickens slightly and the pineapple is warmed through.
  5. Step 5: Assemble the Meal Prep Bowls: Divide the cooked rice evenly among four airtight meal prep containers. Top each portion of rice with the beef, vegetable, and pineapple mixture. Garnish with sliced green onions and sesame seeds.
